Since 2014, Chef Dan Barber has brought his loves of farming and cooking together to New York to create a locally sourced, seasonal menu served in a cozy townhouse in Greenwich Village. In August of 2020, Chef Barber launched a Chef-in-Residence series where each chef contestant from different culinary backgrounds provides meals at Blue Hill for a 5-week period, concluding in May of 2021. Chef Barber prioritized the chefs by who may have lost their kitchen due to the pandemic, or who might not have had the opportunity to cook at a facility such as his. He looks to educate his staff as well about the various styles of cooking that each chef brings. This unique interim opportunity is a great way for the restaurant to continuously bring unique dining experiences to the community.

When dining at Blue Hill you will have the option of two menus: a “farmer’s feast” tasting menu and a prix fixe option. Both provided equally fresh and flavorful options to choose from. The Pig Done 3 Ways is a great option to start with. This variety is exactly as the name calls, with the stand-out being the crispy pork belly. Guests will also enjoy the fresh farm-to-table vegetables included in the Amuse Bouch of tiny carrots, radishes, and turnips. The Cacio e Pepe is a twist on a classic, using Tetra squash stems to create the ‘penne pasta’ element. Dessert is well-curated and light. You can expect to receive fresh fruit either on a cloud of meringue or even as a mini blueberry pie.

Blue Hill has gone above and beyond to make guests feel safe and welcome at their restaurant. On top of providing outdoor seating, socially distanced tables, masks, and sanitization; Blue Hill has also created unique to-go options for guests as well. Their ‘ResourcED’ Boxes allow you to pick up a variety of options such as The Breakfast Box which has fresh eggs, bacon, and syrup from the woodlands to The Charcuterie Box which is great for picnics. They also offer soups, seafood, and cakes in full portions for guests as well. Another great to-go option is their Vegetable Boxes and Meat Boxes which provided a variety of fresh ingredients for guests to cook at their leisure. Don’t be shy though, the ambiance and service remain impeccable in the showstopping dining room at Blue Hill.
