Chef Perry Bateman began by working in restaurants owned by grandparents, aunts, and uncles in Maui.  He was mentored by his step-father who taught him the basics. Landing his first job at Mama’s Fish  House at 18 years old in the pantry as a sous chef, the owners quickly identified him as someone who could hold an executive chef position. 21 years later Chef Bateman has shown his commitment to the restaurant and his community. He continues to maintain a high-quality standard while providing cuisine that reflects the beauty of Hawaii.  

Guests will love the atmosphere here. Set on the North shore of Maui, this landmark provides beautiful  Polynesian décor with stunning ocean views. To start, we recommend the Macadamia Nut Crab Cakes which have a crunchy topping that is lightly fried with plenty of compliments of crab. Mama’s Fish  House is known for, you guessed it, their fresh fish. Fishermen bring fish daily and it is processed and served within 24 hours. You will notice that the daily menu will list the name of that day’s fisherman and where they caught their fish. Talk about fresh!

Two great entrée options are Mama’s Stuffed Fish with  Lobster and Crab and the Mahi-Mahi and Ahi in Panang Curry. The stuffed fish is baked with a  macadamia crust covering a buttery choice of fish with lobster and crab accompaniments. The curry dish comes with a house special mango chutney, Hana banana, macadamia nuts, and sambal. These sweet asides add a flair to this fresh and flavorful dish. You also can’t end your visit without trying the  Polynesian Black Pearl which is a Liliko’i chocolate mousse in a pastry seashell with a beautiful presentation.  

To keep guests safe during the COVID-19 pandemic, Mama’s Fish House has implemented protocols above those of state standards. They are enrolled with ReturnSafe which is a digital health screening program for staff members to use and pass before coming into work each day. Currently, reservations are at 50% capacity with limited hours as well. The tables are adequately spaced and the staff maintains mask-wearing at all times. The restaurant has also created a magical setting outdoors with beautiful views of the beach and water – open-air dining has never looked better at Mama’s Fish House.

Tony Lagana

Chef Tony is a 42-year veteran of the food industry and is often known by his peers as “The New Product Guru.” Throughout his illustrious culinary career, he’s earned several notable titles and positions including Acquisition International’s “Most Influential Product Development Expert, U.S.” in 2019.

In 1997, Tony also founded Culinary Systems Inc., a group of culinary consultants that assist with culinary training, restaurant start-ups, concept development, and more.
