Chef David Patterson’s passion includes the heritage of flavors from the regions of the area. As Executive Chef of the Broadmoor in Colorado Springs, he oversees the Penrose Room. Chef Patterson worked for 5 years with Chef Alain Ducasse at Adour Restaurant and Benoit Bistro NYC. He has trained in kitchens in Paris and Monaco and has worked in several Michelin 3 star restaurants as well as other award-winning restaurants. Prior to the Penrose Room, David also worked at Hotel Hana-Maui where he created a Farm-To-Table menu working with local farms, fisheries, and cattlemen. The Penrose Room is the only restaurant in Colorado to be awarded both the Forbes 5 Star Award and the AAA 5 Diamond Award. The history of the Broadmoor Hotel and the Penrose Room adds to its intrigue. Formally opened in 1918, the Broadmoor expanded as the area grew. The Penrose Room was opened in 1961 and has been successful since then. It has been a AAA 5 Diamond restaurant for almost 14 years.

The Penrose Room offers 3 menus or a 5-course Chef’s Tasting Menu. For the adventurous, a unique first-course offering is Bison Carpaccio with pickled pear onions, cornichons, quail egg, and black truffle aioli. Ruby Beet Salad with pear, walnuts, bleu cheese, and black truffle vinaigrette provides a flavorful, refreshing start to your meal. The main courses include Spiced Crusted Venison Loin or Dover Sole Roulade. A popular offering is Charcoal Grilled Black Cod with a Black Garlic Sauce. Desserts are eclectic. You can finish your meal with Baba (a hibiscus enriched sweet dough) or Pavlova. Or perhaps you prefer a Sweet Potato Pie with poached pears and ginger dough. A separate cheese course is also offered as well. Whatever your choice, the service, atmosphere, quality, and selection of food is outstanding. It will be a meal you will not forget.
